  • 1 - spanish chorizo, sliced
  • 1 - potato, peeled and sliced thin
  • 1/2 - onion, sliced thin
  • 1/2 - green pepper, sliced thin
  • 1/2 - red pepper, sliced thin
  • 2 - olive oil
  • 6 - eggs, beaten
  • - salt/pepper

How To Make spanish chorizo & potato frittata

  • Step 1
    In a skillet, place the olive oil and potatoes, on low about 5 mins.
  • Step 2
    add in the onions, peppers and chorizo toss gently with the potatoes and saute another 5 mins.
  • Step 3
    meanwhile, preheat oven to 325.
  • Step 4
    add in the beaten eggs, salt & pepper.
  • Step 5
    bake for a.bout 20 mins, until eggs are set and cooked through
