Spanish Chorizo & Potato Frittata
1spanish chorizo, sliced
1potato, peeled and sliced thin
1/2onion, sliced thin
1/2green pepper, sliced thin
1/2red pepper, sliced thin
How to Make Spanish Chorizo & Potato Frittata
- In a skillet, place the olive oil and potatoes, on low about 5 mins.
- add in the onions, peppers and chorizo toss gently with the potatoes and saute another 5 mins.
- meanwhile, preheat oven to 325.
- add in the beaten eggs, salt & pepper.
- bake for a.bout 20 mins, until eggs are set and cooked through
