Ingredients
- 2 - medium spaghetti squash, halved
- 1 - onion, chopped
- 4 cloves garlic, minced
- 2 tablespoons olive oil, divided
- 1 1/4 pounds ground meat (turkey or beef)
- 1/4 pound italian sausage
- 1 can 14-16 oz crushed tomatoes
- 2 teaspoons dried oregano
- 2 teaspoons dried basil
- 1/2 cup ricotta cheese
- 1/2 cup cottage cheese
- 1/4 cup parmesan cheese
- 2 cups mozzarella cheese, grated
How To Make spaghetti squash lasagna

Step 1Preheat oven to 400. Remove seeds from squash. Rub squash with olive oil, season with salt and pepper. Place cut side down in roasting pan, add a little water to the pan. Bake 45 minutes to one hour, until soft.

Step 2Add chopped onion and garlic to olive oil in saute pan. Cook until translucent. Add ground meat and sausage and cook thoroughly. Add can of tomatoes and 1 tsp each of spices. Simmer until squash is ready.

Step 3Mix ricotta, cottage cheese, parmesan, 1/3 of the mozzarella, and 1 tsp of basil and oregano.

Step 4When squash is cooked, turn over. Place 1/4 of the cheese mixture in the squash, then, 1/4 of the meat sauce, Sprinkle with mozzarella. Return to the oven until the cheese is melted.
