spaghetti sauce with eggs
When I was growing up we didn't eat meat on Fridays, my mother and grandmother use to make this alot for Friday dinners.

Ingredients
- 1/4 cup olive oil
- 1 cup sweet onion diced
- 2-4 cloves garlic minced
- 1 cup chicken broth
- 1 tablespoon vinegar
- 8 - eggs
- 1 quart tomato
- 1 can tomatoe paste (small can)
- 1/2 cup pecorino romano cheese
- 3 tablespoons fresh basil chopped
- - salt & pepper to taste
How To Make spaghetti sauce with eggs

Step 1Saute onion in olive oil until transparent, add garlic and saute 1-2 minutes. Add chicken broth & vinegar, bring to a simmer. Drop eggs in 1 at a time, cover and simmer until yolks of eggs are hard set.

Step 2In a blender or food processer add tomatoes, paste,cheese, basil, salt and pepper. Pulse just enough to smooth out tomatoes.

Step 3Pour mixture over eggs and simmer for 15-20 minutes over med low heat.

Step 4Serve as a side dish or over your favorite pasta.
