When I was growing up we didn't eat meat on Fridays, my mother and grandmother use to make this alot for Friday dinners.

Ingredients

1/4 c
olive oil
1 c
sweet onion diced
2-4 clove
garlic minced
1 c
chicken broth
1 Tbsp
vinegar
8
eggs
1 qt
tomato
1 can(s)
tomatoe paste (small can)
1/2 c
pecorino romano cheese
3 Tbsp
fresh basil chopped
salt & pepper to taste

How to Make Spaghetti Sauce with Eggs

Step-by-Step

  • 1Saute onion in olive oil until transparent, add garlic and saute 1-2 minutes.
    Add chicken broth & vinegar, bring to a simmer. Drop eggs in 1 at a time, cover and simmer until yolks of eggs are hard set.
  • 2In a blender or food processer add tomatoes, paste,cheese, basil, salt and pepper. Pulse just enough to smooth out tomatoes.
  • 3Pour mixture over eggs and simmer for 15-20 minutes over med low heat.
  • 4Serve as a side dish or over your favorite pasta.
