Spaghetti Sauce with Eggs
1/4 colive oil
1 csweet onion diced
2-4 clovegarlic minced
1 cchicken broth
1 can(s)tomatoe paste (small can)
1/2 cpecorino romano cheese
3 Tbspfresh basil chopped
·salt & pepper to taste
How to Make Spaghetti Sauce with Eggs
- Saute onion in olive oil until transparent, add garlic and saute 1-2 minutes.
Add chicken broth & vinegar, bring to a simmer. Drop eggs in 1 at a time, cover and simmer until yolks of eggs are hard set.
- In a blender or food processer add tomatoes, paste,cheese, basil, salt and pepper. Pulse just enough to smooth out tomatoes.
- Pour mixture over eggs and simmer for 15-20 minutes over med low heat.
- Serve as a side dish or over your favorite pasta.
