Spaghetti Sauce with Eggs

When I was growing up we didn't eat meat on Fridays, my mother and grandmother use to make this alot for Friday dinners.

  • 1/4 c
    olive oil
  • 1 c
    sweet onion diced
  • 2-4 clove
    garlic minced
  • 1 c
    chicken broth
  • 1 Tbsp
  • 8
  • 1 qt
  • 1 can(s)
    tomatoe paste (small can)
  • 1/2 c
    pecorino romano cheese
  • 3 Tbsp
    fresh basil chopped
  • ·
    salt & pepper to taste

How to Make Spaghetti Sauce with Eggs


  1. Saute onion in olive oil until transparent, add garlic and saute 1-2 minutes.
    Add chicken broth & vinegar, bring to a simmer. Drop eggs in 1 at a time, cover and simmer until yolks of eggs are hard set.
  2. In a blender or food processer add tomatoes, paste,cheese, basil, salt and pepper. Pulse just enough to smooth out tomatoes.
  3. Pour mixture over eggs and simmer for 15-20 minutes over med low heat.
  4. Serve as a side dish or over your favorite pasta.
