I came up with this recipe in desperation after forgetting to go to the grocery store ! The family loved it!

Ingredients For southern sausage casserole

  • 1 lb
    (hot) breakfast sausage
  • 3 c
    finely chopped cabbage
  • 1 can
    diced tomatoes (low sodium)
  • 1 can
    mushrooms (small)
  • 1/2 c
    egg beaters
  • 1 md
    onion (chopped)
  • mrs. dash table blend to taste
  • salt and pepper to taste
  • 2 tsp
    splenda

How To Make southern sausage casserole

  • 1
    Preheat oven to 375 degrees. Cook and drain sausage, making sure it is crumbled well. While sausage is cooking finely chop cabbage and put in large bowl. Open and pour can tomatoes over the cabbage, Add Egg Beaters, chopped onion, Splenda, salt and pepper, Mrs. Dash and toss together. When sausage is done, drain and pour over cabbage mixture. Toss together and pour into a 9 x 13 glass casserole dish that you've sprayed with Pam. Cover with foil and bake for 45 min. When done you can sprinkle 1/2 cup light cheddar cheese over it if you like. Although this will add about 200 calories to entire dish.
