smoky egg salad

Decided I was craving egg salad and took a basic recipe and tweaked it. Mayo, mustard and spices can all be adjusted to suit your tastes. I used large brown eggs which I hardboiled in water with a little salt for about 20 minutes.

Ingredients

  • 8 large hard boiled eggs
  • 8 ounces jar real mayonnaise
  • 2 - medium shallots, chopped
  • 1 tablespoon jack daniels' hickory smoke mustard
  • 1-1/2 teaspoon smoked paprika
  • - smoked sea salt (to taste)
  • - fresh ground pepper (to taste)
  • - chopped cooked bacon, optional

How To Make smoky egg salad

  • Step 1
    Shell and chop the hardboiled eggs, then chop the shallots.
  • Step 2
    Mix all ingredients thoroughly in a large bowl. Cover and chill overnight. Spices should be adjusted to suit taste.
  • Step 3
    OPTIONAL: Top with crumbled bacon before serving.
