smoked sausage & cheesy cauliflower casserole
My family aren't great vegie eaters so I cover them w/cheese and sausage to get the job done! I usually add the sausages to the cauliflower w/a little onion then cover w/cheese sauce before baking. My larger casserole dish was already in use this time so I separated them. When you pre-cook or thaw the cauliflower, keep your family's preferences in mind. Mine cannot stand a mushy vegetable unless it is potatoes..and then anything goes.lol The point is, I don't pre-cook mine because my husband likes his cauliflower "al dente"...with a little crunch.

Ingredients
- 24 ounces frzn cauliflower--thawed
- 1 pound polish sausage/keilbasa
- 2 1/2 cups milk
- 8 tablespoons butter
- 8 tablespoons flour
- 2 teaspoons salt
- 2 teaspoons pepper
- 3 cups cheddar cheese

Step 1Melt butter in saucepan Add flour, salt and pepper Brown to create a light roux

Step 2Slowly add milk while stirring w/wire wisk keeping it smooth Cook stirring constantly till thickens

Step 3Remove from heat and add cheese Stir to combine

Step 4Place cauliflower into casserole dish. Pour cheese sauce over to cover

Step 5Place polish sausage/keilbasa on top of all Bake 30 min. in 350 degree oven.
