smoked sausage & cheesy cauliflower casserole

My family aren't great vegie eaters so I cover them w/cheese and sausage to get the job done! I usually add the sausages to the cauliflower w/a little onion then cover w/cheese sauce before baking. My larger casserole dish was already in use this time so I separated them. When you pre-cook or thaw the cauliflower, keep your family's preferences in mind. Mine cannot stand a mushy vegetable unless it is potatoes..and then anything goes.lol The point is, I don't pre-cook mine because my husband likes his cauliflower "al dente"...with a little crunch.

Ingredients

  • 24 ounces frzn cauliflower--thawed
  • 1 pound polish sausage/keilbasa
  • 2 1/2 cups milk
  • 8 tablespoons butter
  • 8 tablespoons flour
  • 2 teaspoons salt
  • 2 teaspoons pepper
  • 3 cups cheddar cheese

How To Make smoked sausage & cheesy cauliflower casserole

  • Step 1
    Melt butter in saucepan Add flour, salt and pepper Brown to create a light roux
  • Step 2
    Slowly add milk while stirring w/wire wisk keeping it smooth Cook stirring constantly till thickens
  • Step 3
    Remove from heat and add cheese Stir to combine
  • Step 4
    Place cauliflower into casserole dish. Pour cheese sauce over to cover
  • Step 5
    Place polish sausage/keilbasa on top of all Bake 30 min. in 350 degree oven.
