Skyline Chili is an iconic brand from Cincinnati that's kept its recipe secret for over 70 years. This is an attempt to copy it. Skyline serves it as "ways". A 3-way is Spaghetti, Chili, Cheese. A 4-way is Spaghetti, Chili, Cheese and onions OR beans. A 5-way is Spaghetti, Chili, Cheese, Onions and Beans. The creator of Skyline Chili was a Greek immigrant, which explains somewhat the complex flavors of this chili, which is unlike any you've had before.

Ingredients

  • 1 pound ground beef (can use pork or venison)
  • 2 tablespoons olive oil
  • 1/4 cup bacon, cooked & crumbled
  • 1 1/2 cups onion, chopped
  • 1 cup green bell pepper, chopped
  • 1 can 15 oz. diced tomatoes
  • 1 can 15 oz tomato sauce
  • 4 ounces tomato paste
  • 4-5 cloves garlic, minced
  • 2 tablespoons cocoa powder, unsweetened
  • 2 tablespoons mild chili powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground cardamom
  • 1 teaspoon ground cumin
  • 1/2 cup red wine
  • 2 tablespoons sugar (or honey) to taste
  • - crushed red pepper, to taste
  • 1 pound spaghetti, dry
  • minced onions
  • grated cheddar cheese

How To Make skyline chili wannabe

  • Step 1
    In a dutch oven or large saucepan, brown the meat. Remove meat and set aside. Drain the fat from the pan.
  • Step 2
    Add the oil to the same pan. Saute the onion and bell pepper until the onion is translucent. Transfer the onion/pepper mixture to the bowl with the meat. Set aside.
  • Step 3
    Add the rest of the ingredients (except pasta and garnishes) to the pan. Bring to a simmer and cook for 10 minutes. Add the meat/veggie mixture. Bring back to a simmer and cook for an additional 30 minutes.
  • Step 4
    Note: this chili is better when prepared a day in advance, which allows the flavors to meld.
  • Step 5
    Meanwhile, cook the spaghetti. Drain. Serve the chili over the spaghetti. Garnish as desired with the onions and/or cheese.
