Ingredients

  • 2 tablespoons oil
  • 6 ounces fingerling potatoes halved
  • 4 ounces baby carrots
  • 1/2 large red onion diced
  • 4 cloves garlic minced
  • 1 package smoked sausage cut into rounds
  • 1 tablespoon each minced thyme and rosemary
  • 1/2 cup shredded cheddar cheese

How To Make skillet potatoes, carrots and sausage

  • Step 1
    Place oil in a large skillet. Add the potatoes and carrots. Season with some salt. Cook stirring occasionally about 10 minutes. Add the onion and garlic. Cook 5 more minutes.
  • Step 2
    Add the sausage, rosemary and thyme. Cook 5 more minutes. Serve sprinkled with cheese.
