- 6 ounces fingerling potatoes halved
- 4 ounces baby carrots
- 1/2 large red onion diced
- 4 cloves garlic minced
- 1 package smoked sausage cut into rounds
- 1 tablespoon each minced thyme and rosemary
- 1/2 cup shredded cheddar cheese
How To Make skillet potatoes, carrots and sausage

Step 1Place oil in a large skillet. Add the potatoes and carrots. Season with some salt. Cook stirring occasionally about 10 minutes. Add the onion and garlic. Cook 5 more minutes.

Step 2Add the sausage, rosemary and thyme. Cook 5 more minutes. Serve sprinkled with cheese.
