1Soak the rice sticks in hot water for 30 minutes. Drain.
2Meanwhile mix all the ingredients for the sauce together and set aside.
3Place oil in a large skillet. Add the onion, garlic, and red bell pepper and stir fry until softened. Add the chicken and cook 2 minutes. Add the shrimp and rice sticks. Cook 1 minute. Push the noodles to the side and add the eggs and let them set up then stir them into the noodles.
4Add the sauce and cook until bubbly and well combined with the noodles.
Serve sprinkled with cilantro
