This is a very good Caribbean dish. Easy and quick too! I love shrimp almost as much as coconut! In Spanish: Camarones con Coco.

Ingredients

  • 1 1/2 pounds large shrimp, peeled and deveined
  • 1 teaspoon garlic salt seasoning
  • 3 tablespoons olive oil
  • 2 cups finely chopped onion
  • 3 - scallions sliced thin, both green and white
  • 3 - cloves garlic, minced
  • 1/2 cup tomato sauce
  • 1 cup clam broth
  • 1 can coconut milk
  • SERVE WITH HOT WHITE RICE, ALTHOUGH I LIKE IT WITH PASTA TOO.

How To Make shrimp in coconut sauce

  • Step 1
    Season shrimp, set aside
  • Step 2
    In skillet, heat oil on medium. Stir in onion, scallion and garlic and cook, stirring 10 minutes until onion is translucent.
  • Step 3
    Stir in tomato sauce and cook 5 minutes.
  • Step 4
    Stir in clam broth and coconut milk, bring to boil, lower heat and simmer 5 minutes.
  • Step 5
    Add shrimp and cook, turn once until shrimp cook through, about 5 minutes. Serve over rice.
