A perfect vegetarian meal. Add a green veggie or salad, and you have a delicious dinner. Serve with rice of your choice - we prefer brown rice.

Ingredients

  • 2 teaspoons ghee or coconut oil (can use vegetable oil)
  • 1 cup onion, chopped
  • 1/2 cup celery, chopped
  • 3 cloves garlic, finely minced
  • 2 teaspoons gingerroot, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 dash cayenne pepper (optional)
  • 1 can petite diced tomatoes (16 oz)
  • 1 1/2 cups vegetable broth
  • 1/2 cup brown lentils (uncooked)
  • 1 tablespoon light brown sugar, firmly packed
  • 1/4 teaspoon salt
  • cooked brown rice or rice of your choice

How To Make savory sweet lentils and tomatoes over rice

  • Step 1
    Heat oil in a deep skillet over medium heat. Add onion and celery along with garlic and ginger.
  • Step 2
    Sprinkle cumin and coriander over the mixture along with cayenne (if using). Saute approximately 3 minutes.
  • Step 3
    Add lentils, tomatoes (undrained), vegetable broth, brown sugar and salt. Mix well.
  • Step 4
    Bring to a boil; then reduce the heat to medium-low. Cover and simmer approximately 40 minutes or until lentils are tender.
  • Step 5
    Serve over rice of your choice.
