Ingredients
- 2 teaspoons ghee or coconut oil (can use vegetable oil)
- 1 cup onion, chopped
- 1/2 cup celery, chopped
- 3 cloves garlic, finely minced
- 2 teaspoons gingerroot, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 dash cayenne pepper (optional)
- 1 can petite diced tomatoes (16 oz)
- 1 1/2 cups vegetable broth
- 1/2 cup brown lentils (uncooked)
- 1 tablespoon light brown sugar, firmly packed
- 1/4 teaspoon salt
- cooked brown rice or rice of your choice
How To Make savory sweet lentils and tomatoes over rice

Step 1Heat oil in a deep skillet over medium heat. Add onion and celery along with garlic and ginger.

Step 2Sprinkle cumin and coriander over the mixture along with cayenne (if using). Saute approximately 3 minutes.

Step 3Add lentils, tomatoes (undrained), vegetable broth, brown sugar and salt. Mix well.

Step 4Bring to a boil; then reduce the heat to medium-low. Cover and simmer approximately 40 minutes or until lentils are tender.

Step 5Serve over rice of your choice.
