1 lbroll sausage
1/2 cchopped green pepper
1/2 cchopped green onion
4 can(s)pinto beans
1 can(s)diced tomatoes with chilies (or not)
2 cfour cheese mexican shreds
1 pkgcornbread mix
How to Make Sausage - Pinto Bean Casserole
- Preheat oven following directions on the cornbread mix. In a large skillet brown sausage, breaking up with a fork, as it cooks. Add green pepper and onion. Cook until done. Drain. Return to skillet. Add the beans and tomatoes.
- Pour into a 9 x 13 inch baking dish. Cover the mixture with 1 and 1/2 cups of the cheese. Prepare the corn bread mix according to the package. Spread evenly over the cheese. Sprinkle top with the rest of the cheese. Bake following directions on the cornbread mix package until done and the top is lightly brown.
