sausage, peppers, and potatoes

I got the original recipe from an advertisement for Lipton's Onion Soup mix. Since first making it about 10 or so years ago, I have 'tweaked' it to make it my own. It's a keeper in my house and a lifesaver when you don't have much time. Also, depending on the type of potatoes, I sometimes scrub them clean instead of peeling them.

Ingredients
- 3 tablespoons oil
- 1 pound smoked sausage ( i use turkey for a healthier dish)
- 3-4 - potatoes, medium
- 1-2 - onions, yellow, medium
- 1-2 - green, red, and/or yellow peppers
- 1 package dried onion soup mix
- 2 cups water
- - pepper (soup mix is usually salty enough)
How To Make sausage, peppers, and potatoes

Step 1Slice sausage about 1/2 inch thick. Brown slightly in oil. I use a large pan because of the juice.

Step 2While sausage is cooking, clean and slice pepper(s) and onion(s). Remove sausage from pan; set aside. Saute peppers and onions.

Step 3While vegetables are cooking, clean and cube potatoes. Add the onion soup mix to the water to help dissolve. Add soup and water mix and potatoes to pan. Bring to a boil; return sausage to pan, reduce heat and cover. Simmer until potatoes are fork-soft.

Step 4Serve with crusty bread.
