sausage, peppers, and potatoes

I got the original recipe from an advertisement for Lipton's Onion Soup mix. Since first making it about 10 or so years ago, I have 'tweaked' it to make it my own. It's a keeper in my house and a lifesaver when you don't have much time. Also, depending on the type of potatoes, I sometimes scrub them clean instead of peeling them.

Ingredients

  • 3 tablespoons oil
  • 1 pound smoked sausage ( i use turkey for a healthier dish)
  • 3-4 - potatoes, medium
  • 1-2 - onions, yellow, medium
  • 1-2 - green, red, and/or yellow peppers
  • 1 package dried onion soup mix
  • 2 cups water
  • - pepper (soup mix is usually salty enough)

How To Make sausage, peppers, and potatoes

  • Step 1
    Slice sausage about 1/2 inch thick. Brown slightly in oil. I use a large pan because of the juice.
  • Step 2
    While sausage is cooking, clean and slice pepper(s) and onion(s). Remove sausage from pan; set aside. Saute peppers and onions.
  • Step 3
    While vegetables are cooking, clean and cube potatoes. Add the onion soup mix to the water to help dissolve. Add soup and water mix and potatoes to pan. Bring to a boil; return sausage to pan, reduce heat and cover. Simmer until potatoes are fork-soft.
  • Step 4
    Serve with crusty bread.
