My mom got this recipe from a family friend when I was a kid. We always looked forward to her making this for dinner. It smelled so good when she was cooking it.

Ingredients
- 1 pound smoked sausage, sliced
- 2 tablespoons of vegetable oil
- 1 - large onion, chopped in 3/4 inch chuncks
- 1 - green pepper, cut in 3/4 inch chuncks
- 1 - cup of celery, sliced
- 1 - (14.5 oz.) can of diced tomatoes
- 1 cup of beef broth
- 1 - (14.5 oz.) can of pineapple chuncks
- 1/4 teaspoon of garlic powder
- - pepper to taste
- 1 tablespoon of brown sugar
- 2 tablespoons of cornstarch
- - cooked rice
How To Make sausage and pineapple delight over rice

Step 1Heat oil in large skillet.

Step 2Combine sausage, onion, green pepper and celery in the large skillet.

Step 3Cook until veggies are tender crisp.

Step 4Add tomatoes, broth and seasonings.

Step 5Cover and simmer for 5 minutes.

Step 6Blend cornstarch with pineapple juice.

Step 7Pour into meat and veggie mixture.

Step 8Cook, stirring until thickened. About 2 minutes.
