sausage and pineapple delight over rice

My mom got this recipe from a family friend when I was a kid. We always looked forward to her making this for dinner. It smelled so good when she was cooking it.

Ingredients

  • 1 pound smoked sausage, sliced
  • 2 tablespoons of vegetable oil
  • 1 - large onion, chopped in 3/4 inch chuncks
  • 1 - green pepper, cut in 3/4 inch chuncks
  • 1 - cup of celery, sliced
  • 1 - (14.5 oz.) can of diced tomatoes
  • 1 cup of beef broth
  • 1 - (14.5 oz.) can of pineapple chuncks
  • 1/4 teaspoon of garlic powder
  • - pepper to taste
  • 1 tablespoon of brown sugar
  • 2 tablespoons of cornstarch
  • - cooked rice

How To Make sausage and pineapple delight over rice

  • Step 1
    Heat oil in large skillet.
  • Step 2
    Combine sausage, onion, green pepper and celery in the large skillet.
  • Step 3
    Cook until veggies are tender crisp.
  • Step 4
    Add tomatoes, broth and seasonings.
  • Step 5
    Cover and simmer for 5 minutes.
  • Step 6
    Blend cornstarch with pineapple juice.
  • Step 7
    Pour into meat and veggie mixture.
  • Step 8
    Cook, stirring until thickened. About 2 minutes.
  • Step 9
    Serve over rice.
