I am always trying to get my youngest daughter to eat vegetables. So when my friend gave me this recipe, I put it to the test. I made it and after she took a few bites commented "Mom, this is really good. Whats in it?" I told her I would tell her after dinner. When I told her she not only has asked for it again on numerous occasions, but she likes to tell everyone how she is eating her vegetables.

1.5-2.25 lb
bulk pork sausage
onion chopped
2 clove
garlic, minced
6 c
cauliflower, chopped
eggs, beaten
1 c
parmesan cheese

How to Make Sausage and Cauliflower Casserole


  • 1In a large skillet over med-hi heat, cook sausage until done, 5-7 minutes. Remove sausage to bowl; drain all but 1 Tbl fat fro skillet.
  • 2Add onion and garlic to skillet; cook 2 minutes. Add cauliflower; cook 2 more minutes.
  • 3Remove to large bowl; add eggs, Parmesan cheese and sausage. Still to combine.
  • 4Spoon into 9x13 baking dish; bake 1 hour or until brown at 350
