I came up with this recipe when my husband brought home fresh shrimp. We wanted something like Jambalaya without all the work. I looked into my pantry and found these simple ingredients. This was an instant winner and very simple to prepare. It's a must try! You may substitute half of the shrimp with scallops if you like.

Ingredients

  • 1 package 5.4 oz knorr or other mexican or spanish rice mix, prepared and set aside
  • 1 1/4 pounds fresh shrimp, peeled and deveined
  • 2 tablespoons butter
  • 1 tablespoon vegetable oil
  • 1 large clove of garlic, minced
  • 1 tablespoon fresh chopped parsley
  • 1 cup salsa, chunky
  • OPTIONAL INGREDIENTS: SALT AND PEPPER TO TASTE, A FEW DROPS OF HOT PEPPER SAUCE

How To Make salsa shrimp

  • Step 1
    Prepare the rice mix according to package directions. Set aside.
  • Step 2
    In a large skillet, melt butter and oil together. Heat pan to medium/low. Add garlic and shrimp. Saute the shrimp on either side until cooked through. Be careful not to burn garlic. Season shrimp with salt and pepper to taste.
  • Step 3
    Add the cooked rice to the pan of shrimp and stir in the salsa. Stir fry over medium/low heat for two-4 minutes until all is heated through. A few drops of hot sauce may be added according to your liking.
  • Step 4
    Sprinkle the top with fresh parsley and serve hot.
