- 1 - spaghetti squash
- 1-2 tablespoon extra virgin olive oil
- salt
- freshly ground black pepper
- 1 1/2 cups marinara sauce
- 1 1/2 cups shredded mozzarella cheese
How To Make roasted spaghetti squash

Step 1Preheat oven to 400 degrees. Cover a large baking sheet with parchment paper. Carefully cut the spaghetti squash in half.

Step 2Brush the insides of the squash with olive oil and season with salt and freshly ground black pepper. Place the halves cut side down on the prepared baking sheet. Roast for 30-40 minutes or until fork-tender.

Step 3Once cool enough to handle, use a fork to pull the squash strands from the sides and bottom. Stir each side with half the marinara sauce, and top each side with half the cheese. Put the squash back on the baking sheet and into the oven for 10 minutes or until the cheese is melted.
