Ingredients For rice noodle pancakes with hoisin sauce

  • 4 oz
    rice noodles
  • 1 c
    shredded carrots
  • 1/2 c
    scallions chopped
  • 2 clove
    garlic minced
  • 1 tsp
    grated ginger
  • 1 tsp
    sesame oil
  • 2 lg
    eggs beaten
  • 1 Tbsp
  • hoisin sauce
  • fresh cilantro

How To Make rice noodle pancakes with hoisin sauce

    Cook the rice noodles according to package directions. Drain and cut with scissors if they are long. Place in a bowl and add the carrots, scallions, ginger, garlic, sesame oil and beaten eggs. Mix well.

    In a skillet add the oil and place a clump of rice noodle mixture and flatten pancake style. Cook until golden and crispy on both sides.

    Serve drizzled with Hoisin sauce and garnish with cilantro
