- 4 ounces rice noodles
- 1 cup shredded carrots
- 1/2 cup scallions chopped
- 2 cloves garlic minced
- 1 teaspoon grated ginger
- 1 teaspoon sesame oil
- 2 large eggs beaten
- 1 tablespoon oil
- hoisin sauce
- fresh cilantro
How To Make rice noodle pancakes with hoisin sauce

Step 1Cook the rice noodles according to package directions. Drain and cut with scissors if they are long. Place in a bowl and add the carrots, scallions, ginger, garlic, sesame oil and beaten eggs. Mix well.

Step 2In a skillet add the oil and place a clump of rice noodle mixture and flatten pancake style. Cook until golden and crispy on both sides.

Step 3Serve drizzled with Hoisin sauce and garnish with cilantro
