I cook dinner almost every night and some nights it seems I don't have any time, then my creativity kicks in and I make something in less than 30 minutes and it tastes like I've cooked for an hour!

Ingredients

  • 1/2 cup raw pine nuts
  • 1 - garlic clove
  • 1/2 cup basil leaves
  • 1 - medium red bell pepper
  • 2 tablespoons olive oil
  • 1/4 cup vegetable stock
  • 1/8 teaspoon cayenne pepper
  • 1 pinch sea salt

How To Make red pepper basil creamy pine nut pesto sauce

  • Step 1
    Add pine nuts and garlic with olive oil to frying pan, toast on low heat for 2 minutes, then transfer to food processor, set aside
  • Step 2
    Place red pepper and cayenne pepper in frying pan with olive oil and sauté' for 5 minutes on medium heat
  • Step 3
    Transfer to food processor, then add basil leaves, vegetable stock, and sea salt to taste. Blend on high until creamy consistency. Serve over cooked pasta!
