2lamb shanks

2 Tbspolive oil

1/4 cshaoxing wine

4 cwater

2 Tbsprock sugar or brown sugar

2 Tbspsoy sauce

2 Tbspdark soy sauce

green parts of scallion, for garnish
How To Make red braised lamb shank

1Add oil to a Dutch oven. Season the shanks with salt and pepper. Brown the shanks on all sides. Transfer the shanks to a plate.

2Add the garlic, Shaoxing wine, water, rock sugar and soy sauces. Bring to a boil.

3Reduce to a simmer and add the shanks back to the Dutch oven. Simmer covered for about 1 1/2 hours, turning the shanks so they cook evenly, until the meat is very tender.

4Uncover and cook for 20 more minutes until the braising liquid is reduced to a thick glossy sauce. Add the scallions and serve.
