Ingredients For red braised lamb shank

  • 2
    lamb shanks
  • salt and white pepper
  • 2 Tbsp
    olive oil
  • 1/4 c
    shaoxing wine
  • 4 c
    water
  • 2 Tbsp
    rock sugar or brown sugar
  • 2 Tbsp
    soy sauce
  • 2 Tbsp
    dark soy sauce
  • green parts of scallion, for garnish

How To Make red braised lamb shank

  • 1
    Add oil to a Dutch oven. Season the shanks with salt and pepper. Brown the shanks on all sides. Transfer the shanks to a plate.

    Add the garlic, Shaoxing wine, water, rock sugar and soy sauces. Bring to a boil.

    Reduce to a simmer and add the shanks back to the Dutch oven. Simmer covered for about 1 1/2 hours, turning the shanks so they cook evenly, until the meat is very tender.

    Uncover and cook for 20 more minutes until the braising liquid is reduced to a thick glossy sauce. Add the scallions and serve.
