Ingredients
- 2 lamb shanks
- salt and white pepper
- 2 tablespoons olive oil
- 1/4 cup shaoxing wine
- 4 cups water
- 2 tablespoons rock sugar or brown sugar
- 2 tablespoons soy sauce
- 2 tablespoons dark soy sauce
- green parts of scallion, for garnish
How To Make red braised lamb shank

Step 1Add oil to a Dutch oven. Season the shanks with salt and pepper. Brown the shanks on all sides. Transfer the shanks to a plate.

Step 2Add the garlic, Shaoxing wine, water, rock sugar and soy sauces. Bring to a boil.

Step 3Reduce to a simmer and add the shanks back to the Dutch oven. Simmer covered for about 1 1/2 hours, turning the shanks so they cook evenly, until the meat is very tender.

Step 4Uncover and cook for 20 more minutes until the braising liquid is reduced to a thick glossy sauce. Add the scallions and serve.
