Red beans, sausage & rice my way

Ingredients

2 can(s)creamy red beans, such as blue runner brand

2 can(s)red beans, with liquid (i prefer van camp's new orleans style)

2 can(s)ro-tel tomatoes
-
1 Tbspmore or less, dried oregano

1 Tbspmore or less, dried basil
-
2 Tbspmore or less, dried parsley
-
1-3/4 lbsmoked sausage
-
1 largeonion, chopped
-
1 largebell pepper, chopped
-
1 Tbspchopped garlic
-
3bay leaves
How to Make Red beans, sausage & rice my way
- Cut smoked sausage into coin-size pieces and brown in a 5-quart Dutch oven with a little canola oil added.
- Remove sausage and drain on paper towels.
- Discard all but about 2 tbs. grease and add onion, pepper & onions. Saute' until soft.
- Return sausage to Dutch oven and add remaining ingredients. Simmer on medium heat for about an hour, stirring frequently to make sure it doesn't stick.
- Serve over hot rice (we prefer brown rice)with sides of green salad and cornbread or French bread.
