red beans, sausage & rice my way

I've been making this "recipe" for years but never wrote it down because like most cooks, I don't measure everything and never really considered it to be a recipe.

Ingredients

  • 2 cans creamy red beans, such as blue runner brand
  • 2 cans red beans, with liquid (i prefer van camp's new orleans style)
  • 2 cans ro-tel tomatoes
  • 1 tablespoon more or less, dried oregano
  • 1 tablespoon more or less, dried basil
  • 2 tablespoons more or less, dried parsley
  • 1-3/4 pound smoked sausage
  • 1 large onion, chopped
  • 1 large bell pepper, chopped
  • 1 tablespoon chopped garlic
  • 3 - bay leaves

How To Make red beans, sausage & rice my way

  • Step 1
    Cut smoked sausage into coin-size pieces and brown in a 5-quart Dutch oven with a little canola oil added.
  • Step 2
    Remove sausage and drain on paper towels.
  • Step 3
    Discard all but about 2 tbs. grease and add onion, pepper & onions. Saute' until soft.
  • Step 4
    Return sausage to Dutch oven and add remaining ingredients. Simmer on medium heat for about an hour, stirring frequently to make sure it doesn't stick.
  • Step 5
    Serve over hot rice (we prefer brown rice)with sides of green salad and cornbread or French bread.
