I've been making this "recipe" for years but never wrote it down because like most cooks, I don't measure everything and never really considered it to be a recipe.

Ingredients For red beans, sausage & rice my way

  • 2 can
    creamy red beans, such as blue runner brand
  • 2 can
    red beans, with liquid (i prefer van camp's new orleans style)
  • 2 can
    ro-tel tomatoes
  • 1 Tbsp
    more or less, dried oregano
  • 1 Tbsp
    more or less, dried basil
  • 2 Tbsp
    more or less, dried parsley
  • 1-3/4 lb
    smoked sausage
  • 1 lg
    onion, chopped
  • 1 lg
    bell pepper, chopped
  • 1 Tbsp
    chopped garlic
  • 3
    bay leaves

How To Make red beans, sausage & rice my way

    Cut smoked sausage into coin-size pieces and brown in a 5-quart Dutch oven with a little canola oil added.

    Remove sausage and drain on paper towels.

    Discard all but about 2 tbs. grease and add onion, pepper & onions. Saute' until soft.

    Return sausage to Dutch oven and add remaining ingredients. Simmer on medium heat for about an hour, stirring frequently to make sure it doesn't stick.

    Serve over hot rice (we prefer brown rice)with sides of green salad and cornbread or French bread.
