I've been making this "recipe" for years but never wrote it down because like most cooks, I don't measure everything and never really considered it to be a recipe.

creamy red beans, such as blue runner brand
2 can(s)
red beans, with liquid (i prefer van camp's new orleans style)
2 can(s)
ro-tel tomatoes
1 Tbsp
more or less, dried oregano
1 Tbsp
more or less, dried basil
2 Tbsp
more or less, dried parsley
1-3/4 lb
smoked sausage
1 large
onion, chopped
1 large
bell pepper, chopped
1 Tbsp
chopped garlic
bay leaves

How to Make Red beans, sausage & rice my way


  • 1Cut smoked sausage into coin-size pieces and brown in a 5-quart Dutch oven with a little canola oil added.
  • 2Remove sausage and drain on paper towels.
  • 3Discard all but about 2 tbs. grease and add onion, pepper & onions. Saute' until soft.
  • 4Return sausage to Dutch oven and add remaining ingredients. Simmer on medium heat for about an hour, stirring frequently to make sure it doesn't stick.
  • 5Serve over hot rice (we prefer brown rice)with sides of green salad and cornbread or French bread.
