I've been making this "recipe" for years but never wrote it down because like most cooks, I don't measure everything and never really considered it to be a recipe.

Ingredients
- 2 cans creamy red beans, such as blue runner brand
- 2 cans red beans, with liquid (i prefer van camp's new orleans style)
- 2 cans ro-tel tomatoes
- 1 tablespoon more or less, dried oregano
- 1 tablespoon more or less, dried basil
- 2 tablespoons more or less, dried parsley
- 1-3/4 pound smoked sausage
- 1 large onion, chopped
- 1 large bell pepper, chopped
- 1 tablespoon chopped garlic
- 3 - bay leaves
How To Make red beans, sausage & rice my way

Step 1Cut smoked sausage into coin-size pieces and brown in a 5-quart Dutch oven with a little canola oil added.

Step 2Remove sausage and drain on paper towels.

Step 3Discard all but about 2 tbs. grease and add onion, pepper & onions. Saute' until soft.

Step 4Return sausage to Dutch oven and add remaining ingredients. Simmer on medium heat for about an hour, stirring frequently to make sure it doesn't stick.

Step 5Serve over hot rice (we prefer brown rice)with sides of green salad and cornbread or French bread.
