Ingredients
- 1 pound dry red beans
- 1 large onion (diced)
- 1 medium green bell pepper (diced)
- 1 clove garlic (finely chopped)
- 1/4 cup celery (finely chopped)
- 2 pounds smoked sausage
- 2 teaspoons parsley flakes
- 1 - capful zatarain's liquid seafood boil
- 2 - beef bouillon, cubes
- 2 dashes cayenne pepper (add more if you like a lot of spice)
- - salt, pepper, garlic powder, onion powder to taste
How To Make red beans n' rice cajun style

Step 1Rinse beans, place in pot, add 8-10 cups water and bring to a boil. You can soak beans overnight for shorter cooking time.

Step 2When beans start boiling, turn heat down to medium or low enough to keep beans at a slow steady boil. Add onions, bell pepper, garlic and celery. Cover and cook until beans start to get tender. You may need to add more water during cooking to keep enough liquid in beans.

Step 3Once beans start getting tender, add sausage, parsley, liquid seafood boil, beef bouillion cubes, cayenne pepper and seasonings to taste. Then continue cooking until beans are tender or mash very easily with fork.

Step 4Serve over hot cooked rice with slices of raw onion.
