red beans and rice

if you want a little more meat try adding baked ham chunks but be careful not to add to much it will take away from the red beans.

Ingredients

  • 8 ounces smoked turkey sausage, sliced
  • 1 1/2 cups chopped onion
  • 1 1/2 cups chopped green peppers
  • 1 1/2 cups sliced celery
  • 1/2 cup sliced green onions and tops
  • 1/2 - jalapeno chili
  • 2 teaspoons minced garlic
  • 2 - bay leaves
  • 1 1/2 teaspoons dried thyme leaves
  • 1 teaspoon dried oregano leaves
  • 1 teaspoon dried marjoram leaves
  • 30 ounces any red colored beans, drained and rinsed
  • 14 1/2 ounces fat-free chicken broth
  • 4 dashes red pepper sauce
  • 1 teaspoon salt,cayenne and black pepper to taste
  • 4 cups cooked rice, warm

How To Make red beans and rice

  • Step 1
    cook sausage in a large saucepan over medium heat until well browned. drain excess fat. add onions, green peppers, celery, green onions, jalapeno chili and garlic to pan; saute until vegetables begin to brown, about 5 minutes. stir in herbs let cook a few minutes more.
  • Step 2
    add beans to saucepan; mash some of the beans maybe like a quarter with potato masher. add broth and heat to a boil. reduce heat to a simmer, uncovered, until vegetables are tender and broth is thick, about 20 minutes. discard bay leaves; season to taste with salt, red pepper sauce,cayenne and black pepper.
  • Step 3
    serve over warm rice.
