Ingredients

8 ozsmoked turkey sausage, sliced

1 1/2 cchopped onion

1 1/2 cchopped green peppers

1 1/2 csliced celery

1/2 csliced green onions and tops

1/2jalapeno chili
-
2 tspminced garlic
-
2bay leaves
-
1 1/2 tspdried thyme leaves

1 tspdried oregano leaves

1 tspdried marjoram leaves

30 ozany red colored beans, drained and rinsed

14 1/2 ozfat-free chicken broth
-
4 dash(es)red pepper sauce
-
1 tspsalt,cayenne and black pepper to taste

4 ccooked rice, warm
How to Make Red Beans and Rice
- cook sausage in a large saucepan over medium heat until well browned. drain excess fat. add onions, green peppers, celery, green onions, jalapeno chili and garlic to pan; saute until vegetables begin to brown, about 5 minutes. stir in herbs let cook a few minutes more.
- add beans to saucepan; mash some of the beans maybe like a quarter with potato masher. add broth and heat to a boil. reduce heat to a simmer, uncovered, until vegetables are tender and broth is thick, about 20 minutes. discard bay leaves; season to taste with salt, red pepper sauce,cayenne and black pepper.
- serve over warm rice.
