if you want a little more meat try adding baked ham chunks but be careful not to add to much it will take away from the red beans.

smoked turkey sausage, sliced
1 1/2 c
chopped onion
1 1/2 c
chopped green peppers
1 1/2 c
sliced celery
1/2 c
sliced green onions and tops
jalapeno chili
2 tsp
minced garlic
bay leaves
1 1/2 tsp
dried thyme leaves
1 tsp
dried oregano leaves
1 tsp
dried marjoram leaves
30 oz
any red colored beans, drained and rinsed
14 1/2 oz
fat-free chicken broth
4 dash(es)
red pepper sauce
1 tsp
salt,cayenne and black pepper to taste
4 c
cooked rice, warm

How to Make Red Beans and Rice


  • 1cook sausage in a large saucepan over medium heat until well browned. drain excess fat. add onions, green peppers, celery, green onions, jalapeno chili and garlic to pan; saute until vegetables begin to brown, about 5 minutes. stir in herbs let cook a few minutes more.
  • 2add beans to saucepan; mash some of the beans maybe like a quarter with potato masher. add broth and heat to a boil. reduce heat to a simmer, uncovered, until vegetables are tender and broth is thick, about 20 minutes. discard bay leaves; season to taste with salt, red pepper sauce,cayenne and black pepper.
  • 3serve over warm rice.
