real cajun beans and rice

I was given this recipe in 1977 from a dear friend Pat K. I have revised it over the years to suit my families palate. I hope that you enjoy this as much as we have over the last 34 years. I also serve Corn Bread with this,and that's a new revision too,(more later on that) plus you must always serve it over rice. Juice and all. Enjoy. :-)

Ingredients
- 2 cups dry pinto beans. "i always do a one hour fast soak; in a large pot combine the 2 cups of beans with 8 cups of water, bring to a boil, and boil for 2 minutes. turn off the heat, cover and let stand one hour. then drain and rinse beans
- 1/2 pound bacon, chopped
- 2 quarts water, cold add the beans that have been through the 1 hour fast soak.
- 1 large yellow onion, chopped (approx. 2 cups)
- 4 bunches green onions, chopped
- 1 cup red, orange, and yellow bell peppers chopped i buy the mini peppers at costco and love them
- 2 cloves garlic chopped fine
- 1 tablespoon salt
- 1 teaspoon red cayenne powdered pepper
- 1 teaspoon hot pepper flakes
- 1 teaspoon black pepper
- 4 dashes tobasco sauce
- 1 tablespoon worcestershire sauce
- 1/4 teaspoon oregano, dried
- 1/4 teaspoon thyme, dried
- 1 can 15 oz. size of tomato sauce
- 1 pound jimmy deans hot bulk sausage. form into small patties, and brown in a non-stick pan; let cool then cut into fourths and add to the beans.

How To Make real cajun beans and rice

Step 1cook the chopped bacon on medium to low until it starts to get soft but NOT crisp; then add the chopped yellow onion and chopped garlic, cook until soft, then with a slotted spoon add all to the beans and water, then add the chopped green onions. Now add 2 tsp. of olive oil to the non-stick pan and cook the chopped peppers. when they are cooked through add to the beans. Then add all of the seasonings and tomato sauce and stir well. Cook on low until the beans are cooked to tender, approx. 1 hour and 45 min. Now cook your white rice. and make your corn muffins or bread.

Step 2When ready to serve place rice on the plate, pour the beans, sausage and juice over the rice. serve with corn bread and a green salad if desired. And enjoy. :-) (For a tender palate you may use less of the hot peppers but please use all as each brings a different flavor to the beans.)
