Ingredients
- 1 - onion, diced
- 2 tablespoons olive oil
- 3 - cloves garlic, minced
- 28 oz - can stewed tomatoes
- 1 - egglant, peeled and cubed
- 1 - zucchini, halved lengthwise and thinly sliced
- 1 - yellow squash, halved lengthwise, sliced thinly
- 1 - green pepper, diced
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh oregano, chopped
- - salt and pepper to taste
How To Make ratatouille

Step 1In a skillet over medium heat, saute onion in oil until soft. Add garlic; saute for one minutes and remove from heat. Combine undrained tomatoes and remaining ingredients in a slow cooker. Add onion mixture; stir gently. Cover and cook on low setting for 5-6 hours.
