Ingredients

  • 1 - onion, diced
  • 2 tablespoons olive oil
  • 3 - cloves garlic, minced
  • 28 oz - can stewed tomatoes
  • 1 - egglant, peeled and cubed
  • 1 - zucchini, halved lengthwise and thinly sliced
  • 1 - yellow squash, halved lengthwise, sliced thinly
  • 1 - green pepper, diced
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh oregano, chopped
  • - salt and pepper to taste

How To Make ratatouille

  • Step 1
    In a skillet over medium heat, saute onion in oil until soft. Add garlic; saute for one minutes and remove from heat. Combine undrained tomatoes and remaining ingredients in a slow cooker. Add onion mixture; stir gently. Cover and cook on low setting for 5-6 hours.
