onion, diced
2 Tbsp
olive oil
cloves garlic, minced
28 oz
can stewed tomatoes
egglant, peeled and cubed
zucchini, halved lengthwise and thinly sliced
yellow squash, halved lengthwise, sliced thinly
green pepper, diced
1 Tbsp
fresh thyme, chopped
1 Tbsp
fresh oregano, chopped
salt and pepper to taste

How to Make Ratatouille


  • 1In a skillet over medium heat, saute onion in oil until soft. Add garlic; saute for one minutes and remove from heat. Combine undrained tomatoes and remaining ingredients in a slow cooker. Add onion mixture; stir gently. Cover and cook on low setting for 5-6 hours.
