  • 1 c
    cooked quinoa (following package directions)
  • 1/4 c
    dried sweet cherries (sliced in half) - can use dried cranberries
  • 1/4 c
    pine nuts (pan toasted)
  • 1 - 2
    scallions (finely chopped)
  • 1/2 c
    baby spinach (finely chopped)
  • 1/2 c
    arugula (finely chopped)
  • 1/4 c
    fresh mint (finely chopped)
  • 1/4 c
    fresh flat leaf parsley (finely chopped)

  • 2 Tbsp
    meyer lemon olive oil blend (or extra-virgin olive oil)
  • 1/2 tsp
    dijon mustard
  • 2 Tbsp
    fresh lemon juice
  • 1 tsp
    lemon zest
  • ·
    kosher salt to taste
  • ·
    freshly ground pepper to taste

How to Make Quinoa with Dried Cherries & Pine Nuts


  1. Cook quinoa according to package directions.
  2. Make Dressing: Combine dressing ingredients in a large bowl. Stir with a whisk until incorporated.
  3. Add cherries, pine nuts, scallion, spinach, arugula, mint, parsley and dressing to quinoa. Toss to gently combine.
  4. Serve chilled or at room temperature.
