Ingredients For quinoa with dried cherries & pine nuts

1 ccooked quinoa (following package directions)

1/4 cdried sweet cherries (sliced in half) - can use dried cranberries

1/4 cpine nuts (pan toasted)

1 - 2scallions (finely chopped)
-
1/2 cbaby spinach (finely chopped)

1/2 carugula (finely chopped)
-
1/4 cfresh mint (finely chopped)
-
1/4 cfresh flat leaf parsley (finely chopped)
- DRESSING
-
2 Tbspmeyer lemon olive oil blend (or extra-virgin olive oil)

1/2 tspdijon mustard
-
2 Tbspfresh lemon juice
-
1 tsplemon zest
-
kosher salt to taste

freshly ground pepper to taste
How To Make quinoa with dried cherries & pine nuts

1Cook quinoa according to package directions.

2Make Dressing: Combine dressing ingredients in a large bowl. Stir with a whisk until incorporated.

3Add cherries, pine nuts, scallion, spinach, arugula, mint, parsley and dressing to quinoa. Toss to gently combine.

4Serve chilled or at room temperature.
