Ingredients

  • 1 cup cooked quinoa (following package directions)
  • 1/4 cup dried sweet cherries (sliced in half) - can use dried cranberries
  • 1/4 cup pine nuts (pan toasted)
  • 1 - 2 - scallions (finely chopped)
  • 1/2 cup baby spinach (finely chopped)
  • 1/2 cup arugula (finely chopped)
  • 1/4 cup fresh mint (finely chopped)
  • 1/4 cup fresh flat leaf parsley (finely chopped)
  • DRESSING
  • 2 tablespoons meyer lemon olive oil blend (or extra-virgin olive oil)
  • 1/2 teaspoon dijon mustard
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • - kosher salt to taste
  • - freshly ground pepper to taste

How To Make quinoa with dried cherries & pine nuts

  • Step 1
    Cook quinoa according to package directions.
  • Step 2
    Make Dressing: Combine dressing ingredients in a large bowl. Stir with a whisk until incorporated.
  • Step 3
    Add cherries, pine nuts, scallion, spinach, arugula, mint, parsley and dressing to quinoa. Toss to gently combine.
  • Step 4
    Serve chilled or at room temperature.
