Ingredients
- 1 cup cooked quinoa (following package directions)
- 1/4 cup dried sweet cherries (sliced in half) - can use dried cranberries
- 1/4 cup pine nuts (pan toasted)
- 1 - 2 - scallions (finely chopped)
- 1/2 cup baby spinach (finely chopped)
- 1/2 cup arugula (finely chopped)
- 1/4 cup fresh mint (finely chopped)
- 1/4 cup fresh flat leaf parsley (finely chopped)
- DRESSING
- 2 tablespoons meyer lemon olive oil blend (or extra-virgin olive oil)
- 1/2 teaspoon dijon mustard
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- - kosher salt to taste
- - freshly ground pepper to taste
How To Make quinoa with dried cherries & pine nuts

Step 1Cook quinoa according to package directions.

Step 2Make Dressing: Combine dressing ingredients in a large bowl. Stir with a whisk until incorporated.

Step 3Add cherries, pine nuts, scallion, spinach, arugula, mint, parsley and dressing to quinoa. Toss to gently combine.

Step 4Serve chilled or at room temperature.
