I used to work in a concession area of a bingo hall in North Mississippi years ago. On Sundays I would make something homemade. I found this in one of my Southern Living Annual recipe books. I could never make enough or make it often enough. The folks there went crazy over it.

Ingredients
- 2 1/4 cups water
- 1 1/2 cups uncooked long-grain rice
- 1 can cream of celery soup
- 1 can cream of onion soup
- 1 can can of rotel
- 1 pound beef or pork link sausage, sliced in 1/4 in. slices
How To Make quick jambalaya

Step 1Put first 5 ingredients in 2qt greased baking dish. Stir to combine. Cover and bake at 350 for 40 min.

Step 2Take out of oven and stir in sausage. Cover and bake approximately 20 more minutes or until rice is done.
