Ingredients

  • 1 tablespoon canola oil
  • 8 cups fresh broccoli florets
  • 1 tablespoon butter
  • 1/4 cup onion, chopped
  • 3 cups chicken broth
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon black pepper
  • 2 packages 3 oz. pkgs. chicken flavored ramen noodles, broken into small pieces
  • 3 cups milk
  • 3/4 pound velveeta cheese, cubed

How To Make quick & easy broccoli cheese soup

  • Step 1
    Heat oil in a large dutch oven over medium high heat. Add the broccoli florets; toss to coat until crisp-tender, stirring frequently. Remove and set aside.
  • Step 2
    In the same dutch oven, melt the butter. Add the onion and cook until tender. Stir in the broth, garlic salt, and pepper and bring to a boil.
  • Step 3
    Break the noodles into pieces and add them to the pot along with the seasoning packets.
  • Step 4
    Reduce the heat to medium low and add the milk and cheese. Stir constantly until melted. Add the broccoli. Heat until warm and serve.
