quick cabbage kraut w/ sausage

This recipe was the result of being given several heads of cabbage and getting tired of coleslaw so I just went with this. My husband and I both love it and it is so easy to do. We like it sweet/sour but of you want it more one of the other adjust the sugar/vinegar mix. Also add or subtract any of the other vegetables wanted. Vegatarians could just eliminate the sausage steps.

Ingredients

  • 1/2 - head small to medium cabbage diced to 1/2 to 1/3 inch small
  • 1 medium carrot shredded or diced finely (1/4
  • 1/3 to 1/2 cup bell pepper any color,diced to 1/2
  • 1/3 to 1/2 cup onion diced to 1/2
  • 1/3 to/1/2 cup celery diced to 1/2
  • 1/2 teaspoon garlic powder or 1 1/2 teaspoons fresh garlic finely minced or pressed
  • 1/3 cup vinegar either white or apple cider
  • 3-5 tablespoons sugar
  • 1 1/2 teaspoons salt-free all purpose seasoning
  • 1/4 to 1/2 teaspoon salt
  • 1/4 teaspoon pepper if not included in all purpose seasoning
  • 1 cup water
  • 1-2 tablespoon cornstarch
  • 3 tablespoons oil
  • 2 tablespoons margerine
  • 1/2 to 3/4 pounds smoked or other sausage (smoked, keilbasa or italian work best) cut in half and sliced into half moons

How To Make quick cabbage kraut w/ sausage

  • Step 1
    Mix vinegar, sugar, salt. seasonings, garlic in a small bowl. In a larger bowl mix the cabbage, carrots bell pepper, onion,celery. Sprinkle with vinegar mixture over and stir together well.
  • Step 2
    In large frying pan melt half of the oil and margerine together, add the sliced sausage and cook until done. Set aside. Melt remaining oil and margerine in frying pan, if needed, add cabbage and vegetable mixture and stir fry for several minutes then add most of the water, and cover for 3-5 minutes until all the vegetables are tender crisp. Mix the cornstarch with at least 2 Tablespoons of water. Add to the cabbage mixture and cook an additional 2 minutes. Add sausage back in. Serve.
