pulled pork and rice skillet
I had some left over pulled pork, but no buns! Making it in skillet with rice and veggies worked for us. Use your favorite kind of BBQ sauce. Try it with pulled chicken or left-over turkey!

Ingredients
- 1 tablespoon oil (i used grapeseed)
- 1/2 cup onion, roughly chopped
- 1/2 cup green or red pepper, chopped
- 1/2 teaspoon garlic powder
- 3/4 cup rice
- 1 1/2 cups water (more if necessary)
- 1 cup frozen corn
- 1 can diced tomatoes (14 oz. can)
- 1-1 1/2 cups pulled pork
- 1/2 cup barbecue sauce
- - cilantro or green onion, for garnish
- - shredded cheddar cheese, for garnish
How To Make pulled pork and rice skillet

Step 1Heat oil in skillet. Add onions and peppers and saute until softened. Add garlic powder and rice.

Step 2Stir until rice starts to get toasted. Add water and tomatoes. Turn heat to low and let rice cook until almost done. Add extra water if necessary.

Step 3Add pulled pork, BBQ sauce and corn. Stir together until well mixed. Cover and continue to cook on low until rice is done. Salt and pepper to taste. Garnish with cilantro and/or green onion slices and shredded cheese.
