potato soup
this soup is one of my family and friends favorites,. I usually serve it with some home made rolls on the side. You can chop some ham also to garnish with, I usually set the toppings on the side and let everyone top their own bowl, even without the toppings this is a delicious bowl of soup.

Ingredients
- 2 pounds bacon
- 2 cups diced ham
- 1 large onion diced
- 3 - carrotschopped
- 3 stalks celery chopped
- 4 cloves garlic minced
- 1 stick butter
- 1 bunch greens onions, chopped
- 10 pounds russet potatoes
- 96 ounces chicken broth
- 3 cups shredded cheddar cheese
- 1 teaspoon each salt and pepper
- 3 tablespoons parsley flakes
- 2 teaspoons oregano, dried
- 1 teaspoon paprika
- 2 teaspoons cajun seasoning
- 1 teaspoon cayenne pepper
- 2 cups milk
- 2 cups heavy cream
- 1/2 cup flour
- 8 cups water
How To Make potato soup

Step 1In a large stock pot , cook the bacon until crisp, crumble and put to the side.

Step 2take about 10 potatoes and put them to boil, when done peel, and smash them up, mix in about 1 tsp of adobo powder and 2 pack sazon seasoning, set aside. with the rest of the bag of potatoes, peel and dice and set them in a bowl of water and set aside.

Step 3In the pan that you made the bacon in, pour off some of the grease, not all of it, and to that add the stick of butter ,and saute the carrots, celery, garlic and onion. cook until tender, then sprinkle the flour over it and continue to cook stirring constantly, about 5 minutes.

Step 4add chicken broth , water, diced potatoes, and seasonings, cook stirring occasionally until potatoes are fully cooked.

Step 5add the diced ham, and the smashed potatoes mix well to break up the smashed potatoes

Step 6in a bowl combine the milk and heavy cream, take about 2 cups of the hot broth from the pot and slowly add to the milk and cream while stirring, once mixed in slowly add that to the pot while stirring.

Step 7add the cheese and half the bacon crumbles, and half of the green onion, continue to cook , stirring constantly until cheese is melted.

Step 8garnish with a dallop of sour cream and a sprinkle of the bacon, green onion and a little cheddar cheese. serve and enjoy
