Ingredients
- 1 pound red potatoees, cubed
- 3 tablespoons water
- 3/4 package smoked kielbasa, cut in 1/4" slices
- 1/2 cup chopped onion
- 1 tablespoon olive oil
- 2 tablespoons brown sugar
- 2 tablespoons cider vinegar
- 1 tablespoon dijon mustard
- 1/2 teaspoon dried thyme
- 1/4 teaspoon pepper
- 4 cups baby spinach
- 5 slices bacon, cooked & crumbled
How To Make potato kielbasa skillet

Step 1Place potatoes and water in a microwave safe dish. Cover and microwave on hihg for 4 minutes until tender, drain.

Step 2In a large skillet, saute kielbasa and onion in oil until onion is tender. Add potatoes, saute 3-5 minutes longer until lightly browned.

Step 3Combine the brown sugar, vinegar, mustard, thyme,and pepper. Stir into skillet. Bring to boil, reduce heat and simmer uncovered for 2-3 minutes. Add spincah and bacon, cook till wilted.
