Ingredients

  • 1 lb
    red potatoees, cubed
  • 3 Tbsp
    water
  • 3/4 pkg
    smoked kielbasa, cut in 1/4" slices
  • 1/2 c
    chopped onion
  • 1 Tbsp
    olive oil
  • 2 Tbsp
    brown sugar
  • 2 Tbsp
    cider vinegar
  • 1 Tbsp
    dijon mustard
  • 1/2 tsp
    dried thyme
  • 1/4 tsp
    pepper
  • 4 c
    baby spinach
  • 5 slice
    bacon, cooked & crumbled

How to Make Potato Kielbasa Skillet

Step-by-Step

  1. Place potatoes and water in a microwave safe dish. Cover and microwave on hihg for 4 minutes until tender, drain.
  2. In a large skillet, saute kielbasa and onion in oil until onion is tender. Add potatoes, saute 3-5 minutes longer until lightly browned.
  3. Combine the brown sugar, vinegar, mustard, thyme,and pepper. Stir into skillet. Bring to boil, reduce heat and simmer uncovered for 2-3 minutes. Add spincah and bacon, cook till wilted.
