heavy cream
1/2 lb
bacon, cooked, drained and chopped
1/2 lb
grated sierra da estrella cheese (swiss cheese may be substituted)
1 Tbsp
chopped chives
slightly beaten egg yolks
1 c
light cream
2 Tbsp
fresh chopped parsley
1 Tbsp
onion, chopped
1/4 lb
linguica, thinly sliced
(9" inch) pastry shell, unbaked

How to Make Portuguese Quiche (Linguica-Cheese Pie)


  • 1Preheat oven to 350 degrees.
  • 2Combine all the ingredients except the linguicia and fill the pastry shell with the mixture.
  • 3Sprinkle the slices of linguica over the top.
  • 4Bake in oven for 20 to 30 minutes, or until center of quiche is firm.
