  • 1/2 c
    heavy cream
  • 1/2 lb
    bacon, cooked, drained and chopped
  • 1/2 lb
    grated sierra da estrella cheese (swiss cheese may be substituted)
  • 1 Tbsp
    chopped chives
  • 2
    slightly beaten egg yolks
  • 1 c
    light cream
  • 2 Tbsp
    fresh chopped parsley
  • 1 Tbsp
    onion, chopped
  • 1/4 lb
    linguica, thinly sliced
  • 1
    (9" inch) pastry shell, unbaked

How to Make Portuguese Quiche (Linguica-Cheese Pie)


  1. Preheat oven to 350 degrees.
  2. Combine all the ingredients except the linguicia and fill the pastry shell with the mixture.
  3. Sprinkle the slices of linguica over the top.
  4. Bake in oven for 20 to 30 minutes, or until center of quiche is firm.
