Ingredients

  • 1/2 cup heavy cream
  • 1/2 pound bacon, cooked, drained and chopped
  • 1/2 pound grated sierra da estrella cheese (swiss cheese may be substituted)
  • 1 tablespoon chopped chives
  • 2 - slightly beaten egg yolks
  • 1 cup light cream
  • 2 tablespoons fresh chopped parsley
  • 1 tablespoon onion, chopped
  • 1/4 pound linguica, thinly sliced
  • 1 - (9" inch) pastry shell, unbaked

How To Make portuguese quiche (linguica-cheese pie)

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    Combine all the ingredients except the linguicia and fill the pastry shell with the mixture.
  • Step 3
    Sprinkle the slices of linguica over the top.
  • Step 4
    Bake in oven for 20 to 30 minutes, or until center of quiche is firm.
