Portuguese chouriço is made with pork, fat, wine, paprika and salt. It is then stuffed into natural or artificial casings and slowly dried over smoke. Another recipe using Portuguese sausage. The sausage can be found on line at Furtados.com or Gasparssausage.com.

Ingredients

  • 2 pounds portuguese chourico, casings removed and crumbled
  • 2 - green bell peppers, seeded and chopped
  • 2 - sweet onions, peeled and chopped
  • 1 (6 oz.) can tomato paste, italian
  • 1 cup red wine
  • 1 cup water
  • 2 tablespoons crushed garlic

How To Make portuguese chourico and peppers

  • Step 1
    In a slow cooker, combine the Chourico , green pepper, onion, tomato paste, wine, water, and crushed garlic. Stir so that everything is evenly distributed.
  • Step 2
    Cover, and set on low and cook for 8 hours.
  • Step 3
    Uncover the pot, and cook an additional 2 hours to allow some of the liquid to evaporate.
  • Step 4
    Can be served over rice, on rolls.
