pork bites with broccoli coleslaw mix in one pot

My friend Candy posted a similar recipe on Facebook. Hers had fresh green beans and cajun seasoning. I had neither. But I loved the idea of pork bites with a vegetable--all cooked in one pot. So I used what I had. You could easily change up the vegetables and the seasonings.

Ingredients

  • 1 pound pork tenderloin, cut into bite-sized cubes
  • 1 teaspoon seasoned salt
  • 1/2 teaspoon cayenne pepper, optional
  • 1-2 teaspoon olive oil
  • 1-2 tablespoon butter
  • 1-2 clove garlic, minced
  • 2 cups broccoli coleslaw mix, blanched or cooked tender crisp
  • 1/4 cup vegetable broth
  • 1-2 tablespoon lemon juice

How To Make pork bites with broccoli coleslaw mix in one pot

  • Step 1
    In a large skillet, add oil and heat.
  • Step 2
    Mix seasoned salt and cayenne pepper, if using. Sprinkle over all the pork bites and mix.
  • Step 3
    Add pork cubes to the hot skillet; stir-fry until pork is no longer pink in the middle. Remove from skillet.
  • Step 4
    To the skillet, add butter and minced garlic. Then add the broth. To that mixture, add the broccoli coleslaw mix. Let cook until the vegetables are your preferred degree of softness. Slide vegetables to one side of skillet. Add pork bites to empty part of skillet and turn them in the butter and broth that remain. When pork is hot, all is ready to serve.
  • Step 5
    Note: I made the broth with water, Chicken Better Than Bouillon and Onion Better Than Bouillon. I didn't want to open a can of broth for 1/4 cup.
