An awesome meal I threw together with what I had on hand, and has already been requested again. The saltiness of the sausage and the natural sweetness of the squash, onion and garlic went so well together. Easy, just some choppingof veggies and meat.

Enjoy! My family tested and highly approved...

How to Make ~ Perfectly Roasted Sausage & Veggies ~

Step-by-Step

  1. Preheat oven to 400 degree F.

In a large bowl, toss the veggies, meat, onion and garlic together. Sprinkle with seasonings and toss with 3 - 4 tablespoons olive oil until all is coated.
  2. On the largest sheet pan you have with sides, cover with foil. Spray with nonstick cooking spray.

Spread the mixture evenly out onto pan in single layer if possible. Drizzle lightly with additional oil.
  3. I baked mine in my convection oven and was done in 1 hour 15 minutes. I'm guessing it would be 1 hour and 30 - 45 minutes regular oven, turning once or twice between baking.
  4. Taste and adjust seasoning if needed. Plate and enjoy!
