~ perfectly roasted sausage & veggies ~

An awesome meal I threw together with what I had on hand, and has already been requested again. The saltiness of the sausage and the natural sweetness of the squash, onion and garlic went so well together. Easy, just some choppingof veggies and meat. Enjoy! My family tested and highly approved...

Ingredients

  • 1 3/4 pounds smoked sausage or kielbasa sliced into 1 inch chunks
  • 4 - med russet potatoes, peeled and cubed about 3/4 inch
  • 1 small butternut squash, peeled and cubed 3/4 inch size
  • 1 large sweet onion, cut in half and cut into several 1/2 inch wedges
  • 8 cloves garlic, smashed
  • Olive - oil for tossing with veggies
  • 1 1/2 tablespoons paprika or more to taste
  • Kosher - salt to taste - i sprinkled evenly
  • Garlic - powder to taste - i used about 1 1/2 tbsp
  • 1 1/2 teaspoons each - dried rosemary & dried thyme
  • Black - pepper to taste
  • Extra - olive oil for drizzling

How To Make ~ perfectly roasted sausage & veggies ~

  • Step 1
    Preheat oven to 400 degree F. In a large bowl, toss the veggies, meat, onion and garlic together. Sprinkle with seasonings and toss with 3 - 4 tablespoons olive oil until all is coated.
  • Step 2
    On the largest sheet pan you have with sides, cover with foil. Spray with nonstick cooking spray. Spread the mixture evenly out onto pan in single layer if possible. Drizzle lightly with additional oil.
  • Step 3
    I baked mine in my convection oven and was done in 1 hour 15 minutes. I'm guessing it would be 1 hour and 30 - 45 minutes regular oven, turning once or twice between baking.
  • Step 4
    Taste and adjust seasoning if needed. Plate and enjoy!
