Ingredients

  • 1 medium red bell pepper, chopped
  • 1 medium onion, chopped
  • 2 tablespoons oil
  • 1 1/2 cups uncooked rice, cooked according to package directions (6 cups cooked)
  • 8 ounces sour cream
  • 1 can cream of celery soup
  • 2 cans chopped green chilis (4.5 oz each)
  • 1 cup roasted corn kernels
  • 2 cups grated pepper jack of monterey jack cheese, divided
  • - salt and pepper

How To Make pepper jack rice bake

  • Step 1
    heat overn to 375 degrees. Grease a 9 x 13 baking dish. Cook bell pepper and onion in oil in large skillet over medium-high heat until softened, about 5-7 minutes. Combine cooked rice, sour cream, soup, green chilis, corn and cooked peppers and onion and 1 cup of the cheese in a large mixingbowl. Blend well. Season with salt and pepper.
  • Step 2
    Pour into greased baking dish. Cover with foil and bake 30 minutes. Remove foil and sprinkle with remaining 1 cup of chesse. Bake an additional 10 minutes or until cheese is melted and the casserole is bubbly.
