red bell pepper, chopped

onion, chopped

uncooked rice, cooked according to package directions (6 cups cooked)
8 oz
sour cream
1 can(s)
cream of celery soup
2 can(s)
chopped green chilis (4.5 oz each)
1 c
roasted corn kernels
2 c
grated pepper jack of monterey jack cheese, divided
salt and pepper

How to Make Pepper Jack Rice Bake


  • 1heat overn to 375 degrees. Grease a 9 x 13 baking dish. Cook bell pepper and onion in oil in large skillet over medium-high heat until softened, about 5-7 minutes. Combine cooked rice, sour cream, soup, green chilis, corn and cooked peppers and onion and 1 cup of the cheese in a large mixingbowl. Blend well. Season with salt and pepper.
  • 2Pour into greased baking dish. Cover with foil and bake 30 minutes. Remove foil and sprinkle with remaining 1 cup of chesse. Bake an additional 10 minutes or until cheese is melted and the casserole is bubbly.
