When my two boys were young we didn't have a lot of money and I had to think of inexpensive low budget meals.

Ingredients

  • 10 ounces bag of small fritos
  • 15 ounces 2 cans mild chili beans
  • 2 cups grated monterey jack and cheddar cheese

How To Make pepper bellies

  • Step 1
    Warm up chili beans on top of stove or microwave. If using stove: warm up to desired temp. If using microwave: place beans in a large microwaveable bowl with cover for 2 to 3 minutes.
  • Step 2
    Line serving dishes with Fritos on bottom and sides.
  • Step 3
    Spoon desired amount of chili beans over Fritos and garnish with shredded cheese. *Or any topping you enjoy!
  • Step 4
    **Note: You may add cooked hamburger meat to chili beans to stretch recipe.
