  • 1/2 c
    soy sauce
  • 4 Tbsp
    rice vinegar
  • 3 Tbsp
    sambal oelek
  • 3 Tbsp
  • 4 Tbsp
    brown sugar
  • 4 clove
    garlic minced

  • 1 medium
    red onion sliced
  • 1 medium
    carrot shredded
  • 8 oz
    shiitake mushrooms sliced
  • 2 c
    romaine lettuce chopped
  • 1/2 c
    green onions chopped
  • 1 c
    fresh cilantro chopped

  • 12 oz
    rice noodles
  • 1 c
    coconut milk
  • 8 oz
    silken tofu cubed

  • 1/2 c
    chopped peanuts
  • 1 large
    lime juiced

How to Make Pad Thai with Tofu


  1. Place the noodles in boiling water and let sit until cooked about 5 to 7 minutes. Drain.
  2. Mix the ingredients together for the sauce and set aside.
  3. Add the coconut milk and noodles to large skillet. Stir in the veggies and tofu. Cook 2 minutes. Pour in the sauce and cook 3 minutes. Serve topped with chopped nuts and a squeeze of lime juice
