Ingredients

  • SAUCE
  • 1/2 cup soy sauce
  • 4 tablespoons rice vinegar
  • 3 tablespoons sambal oelek
  • 3 tablespoons mirin
  • 4 tablespoons brown sugar
  • 4 cloves garlic minced
  • VEGGIES
  • 1 medium red onion sliced
  • 1 medium carrot shredded
  • 8 ounces shiitake mushrooms sliced
  • 2 cups romaine lettuce chopped
  • 1/2 cup green onions chopped
  • 1 cup fresh cilantro chopped
  • NOODLES
  • 12 ounces rice noodles
  • 1 cup coconut milk
  • 8 ounces silken tofu cubed
  • TOPPING
  • 1/2 cup chopped peanuts
  • 1 large lime juiced

How To Make pad thai with tofu

  • Step 1
    Place the noodles in boiling water and let sit until cooked about 5 to 7 minutes. Drain.
  • Step 2
    Mix the ingredients together for the sauce and set aside.
  • Step 3
    Add the coconut milk and noodles to large skillet. Stir in the veggies and tofu. Cook 2 minutes. Pour in the sauce and cook 3 minutes. Serve topped with chopped nuts and a squeeze of lime juice
