Ingredients
- 1 - wild duck
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon ginger
- 2 cups orange juice
- 1 teaspoon lemon juice
- 1 tablespoon currant jelly
How To Make orange-glazed duck

Step 1Preheat oven to 400 degrees F.

Step 2Rub cleaned duck with mix of salt, pepper, paprika and ginger.

Step 3Place in roasting pan (on a rack) and bake at 400 degrees for 1 hour.

Step 4Drain off fat.

Step 5Pour mixture of orange juice, lemon juice and currant jelly over duck.

Step 6Baste frequently and continue to bake until tender.
