This is my husbands favorite "Easy" dinner. I make it alot when we go camping too.

Ingredients

  • 1 or 2 - polska kielbasa or polish sausage
  • 1/2 - bell pepper cut in chunks
  • 2 cans drained whole new potatos cut in half
  • 2 cups sliced or whole mushrooms (your choice)
  • 1 can drained sliced carrots
  • 1/2 - diced onion
  • 1 package shredded coleslaw mix
  • 3 tablespoons butter or margarine
  • 1/2 cup chicken stock or broth
  • - salt and pepper to taste

How To Make one skillet supper

  • Step 1
    Melt butter or margarine in a large skillet and saute the onions and bell pepper. (If you don't like using green bell pepper try red bell peppers they are sweeter and have more vitamin C than oranges)
  • Step 2
    Slice the Kielbasa into slices cut on the diagonal and put in with the onions and bell peppers and brown lightly.
  • Step 3
    Add the mushrooms, carrots and cole slaw mix then add the stock or broth. Put the lid on and let it steam till all is tender and ready.
  • Step 4
    Salt and pepper to taste. Some of my family likes to add caraway seeds but my husband says they get in his partials LOL!
