This is my husbands favorite "Easy" dinner. I make it alot when we go camping too.

Ingredients For one skillet supper

  • 1 or 2
    polska kielbasa or polish sausage
  • 1/2
    bell pepper cut in chunks
  • 2 can
    drained whole new potatos cut in half
  • 2 c
    sliced or whole mushrooms (your choice)
  • 1 can
    drained sliced carrots
  • 1/2
    diced onion
  • 1 pkg
    shredded coleslaw mix
  • 3 Tbsp
    butter or margarine
  • 1/2 c
    chicken stock or broth
  • salt and pepper to taste

How To Make one skillet supper

  • 1
    Melt butter or margarine in a large skillet and saute the onions and bell pepper. (If you don't like using green bell pepper try red bell peppers they are sweeter and have more vitamin C than oranges)
  • 2
    Slice the Kielbasa into slices cut on the diagonal and put in with the onions and bell peppers and brown lightly.

    Add the mushrooms, carrots and cole slaw mix then add the stock or broth. Put the lid on and let it steam till all is tender and ready.

    Salt and pepper to taste. Some of my family likes to add caraway seeds but my husband says they get in his partials LOL!
