norma's special biscuits, eggs, & gravy

During the days when times were rough and money was tight I would make this for our dinner. I'm still making it today when I forget to get meat out of the freezer or just what this dish because it is so good. My daughter was over the other week and I didn't know she was coming so I made this dish and it brought tears to her eyes as she remembers me making it when she was a little girl. By the way; her husband loved it too. I might add that this is not for those on a diet. LOL

Ingredients

  • 4 large eggs, hard boiled
  • 4 - strips of bacon, cooked crisp
  • 1 cup self-rising flour
  • 3 tablespoons shortening
  • 1/4 teaspoon salt
  • 1/2 cup cold milk
  • - basic white sauce
  • 2 tablespoons margarine or butter
  • 1/4 cup all purpose flour
  • 1 1/4 cups milk
  • - salt & pepper to taste
  • 1 - container of your favorite canned biscuits if desired.

How To Make norma's special biscuits, eggs, & gravy

  • Step 1
    Mix in a bowl self-rising flour. Add shortening and blend well with a fork or pastry blender.
  • Step 2
    Add salt, and stir. While stiring add milk until you can form a ball. At times you might need more flour to handle.
  • Step 3
    Pinch of a piece of dough the size of your hand, shape into a biscuit and place it in a greased 8x10 pan. Keep doing this until pan is filled with biscuits sides touching.
  • Step 4
    Place pan of bisuits in a pre-heated oven at 400. Bake until golden brown. (you can use canned biscuits if desired)
  • Step 5
    BASIC WHITE SAUCE:
  • Step 6
    In a saucepan over low heat, melt margarine or butter. Stir in flour and cook 1 minute, stirring or whisking.
  • Step 7
    Remove pan from heat and gradually stir or whisk in the milk.
  • Step 8
    Return pan to heat. Bring slowly to a boil, stirring or whisking, and continue to cook until mixture thickens.
  • Step 9
    Simmer 3 minutes. Remove pan from heat and season with salt and pepper.
  • Step 10
    Place 2 split biscuits on a plate. Top with sliced hard boiled egg and crisp bacon.
  • Step 11
    Serve with white sauce poured over all.
  • Step 12
    (I double this recipe for more sauce).
