norma's mushroom melts

Instead of Veggie burgers or the Hamburger Melts I thought; why not use a large Portobella Mushroom. The are so good and task a little like steak. My sweetie and I love these mushrooms and have them often in many recips. This one is so good. I don't remember where this recipe came from, but I do know that it's great and healthier than burgers if you need to watch your saturated fats in your diet. I think you'll like this meatless burger.

Ingredients

  • 2 tablespoons regular mayonnaise or fat free
  • - juice of 1/2 lemon
  • 1/4 cup finely chopped red peppers
  • 1 clove garlic, minced
  • 4 large portobello mushrooms, caps & stems removed.
  • 1 tablespoon light olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon dried italian seasoning
  • - salt and pepper to taste
  • 1/2 cup shredded mozzarella
  • 4 slices red onion
  • 4 large whole-gran buns or potato rolls
  • - a few handfuls of arugula, mixed greens or other lettuce of your choice

How To Make norma's mushroom melts

  • Step 1
    Heat grill or grill pan. Spray with cooking spray.
  • Step 2
    Combine the mayonnaise, lemon juice, red peppers, and garlic. (For a uniformly red mayo, puree in a food processor)
  • Step 3
    Rub the mushrooms with the olive oil, vinegar, Italian seasoning and salt and pepper.
  • Step 4
    Place mushrooms on grill, top side down and cook for two to three minutes, flip, and immediately add the cheese.
  • Step 5
    Cook for another two to three minutes, until the cheese is melted and the mushrooms are fully cooked.
  • Step 6
    While mushrooms are cooking, grill the onions until browned. Toast the buns if you wish on the grill after removing the onions if using a grll pan.
  • Step 7
    Top each bottom bun with greens,red pepper mayo. Place mushroom on top and cover with grilled onions and top of bun. Serve hot.
