never fail egg noodles

These are very tender noodles, I usually double the recipe and freeze the ones I don't cook right away.

Ingredients

  • 3 large egg yolks
  • 1 large whole egg
  • 4 tablespoons water
  • 1 teaspoon salt
  • 2 cups all purpose flour

How To Make never fail egg noodles

  • Step 1
    Beat egg and yolks until light and fluffy. Add water and salt mix. Stir in flour then turn out onto a lightly floured counter and knead until smooth. This could take up to 5 minutes, don't give up it will be worth it. Cover the dough with a damp towel and let rest for 10 minutes
  • Step 2
    Roll out the dough to about 1/8th inch thick or however you like them. Cut your noodles to desired size. If you don't have a pasta machine just use your pizza cutter. At this point you can cook the noodles, or let them dry over night and then put them in plastic bags and freeze for up to one month.
  • Step 3
    In a large pot bring your water to a boil, add some salt to the water. Boil the noodles for 3 to 5 minutes. Then serve with butter or your favorite sauce. If you want chicken and noodles boil in the chicken broth.
