I had an aunt who made this every summer when I was learning to cook. It took several attempts for my husband to accept it.

Ingredients

  • 3 cups okra
  • 2 1/2 cups tomatoes, chopped
  • 1 cup frozen onions
  • 1 teaspoon garlic finely minced
  • 1/4 cup bacon grease
  • 2 teaspoons Worcestershire sauce
  • 2 tablespoons Old Bay Seasoning
  • 6-8 cups rice, cooked and hot

How To Make nana's gumbo

  • Step 1
    Melt 1/4 cup bacon grease in large cast iron skillet. Saute minced garlic and onion in grease until translucent. Do NOT drain.
  • Step 2
    Chop okra into 1/4 inch pieces. Add okra. Use fresh whenever possible. Stir into onion & garlic and let cook 5-6 minutes.
  • Step 3
    Chop or dice tomatoes into small pieces. Add to okra in skillet. Mix well & bring to a rolling boil.
  • Step 4
    Add seasonings & spices. Reduce heat and let simmer for 30-45 minutes or until most liquid is gone.
  • Gumbo fresh from skillet.
    Step 5
    Serve over rice. OPTIONAL: add meatballs or kielbasa sausage pieces to make a meal.
