my moist turkey meatballs
We are trying to eat a little less beef. That's why I tried using turkey to make my meatballs. These turned out great, moist and delicious! They passed the test, Hubby likes them!

Makes about 40 little meatballs
Ingredients
- 1 pound ground turkey
- 2 tablespoons light olive oil
- 1 medium onion minced
- 1 egg, beaten
- saltine cracker crumbs, from 18 crackers
- 1/4 cup milk
- salt, pepper, and garlic powder
How To Make my moist turkey meatballs

Step 1Place the ground turkey in a large bowl. Break apart and mix in 2 tablespoons of olive oil. This is the secret that helps keep the meatballs moist.

Step 2Then add the remaining ingredients, mix well. Season to taste with above spices, mix again. The mixture is very moist.

Step 3I use a small melon scoop to form the meatballs.

Step 4I like to fry my meatballs in a small amount of "light" olive oil. Fry in two batches, this gives you room to move the meatballs around in the pan.

Step 5Brown well on all sides and cook a few minutes in the pan. That's it! Serve as you would regular meatballs!

Step 6These meatballs are nice and moist! Enjoy!
