I really am in love with banh mi ... the Vietnamese sandwiches that are popping up everywhere. They are so easy to make at home and are very tasty and healthy, too. After you assemble, pour the leftover marinade on top of your sandwich (before you put the top bread on!) to add more flavor.

Ingredients

  • 1 - egg bread roll (or any thicker roll or bread)
  • 1/2 cup shredded carrots
  • 1/4 - red bell pepper, sliced very thin
  • 1 - radish, grated
  • 2 tablespoons red wine vinegar
  • 2 tablespoons olive oil
  • 3 tablespoons sweet red chili sauce
  • 5-6 slices cucumber
  • - handful of shredded mild cheddar and mozzarella cheese
  • - handful of chopped cilantro or other fresh herbs of your choice (optional)

How To Make my banh mi

  • Step 1
    Combine carrots, red pepper, radish, vinegar, olive oil and chili sauce in a bowl. Mix well and set aside.
  • Step 2
    Slice bread roll open. Place cheese on one side. Toast bread until cheese has mostly melted.
  • Step 3
    Assemble sandwich: cucumbers on cheesy slice, then top with the red pepper carrot mix. Additional garnish which are deliscious on a banh mi include cilantro or other fresh herbs.
