Ingredients
- BATTER
- 4 tablespoons butter melted
- 6 eggs
- 2 cups each milk and flour
- 1/4 teaspoon salt
- oil for cooking
- FILLING
- 8 ounces mushrooms chopped
- 4 cloves garlic minced
- 2 cups fresh spinach
- 6 ounces shredded parmesan
- salt and pepper
- GARNISH
- any herbs like basil or parsley
How To Make mushroom and spinach crepes

Step 1Mix the ingredients for the batter together and whip until it's pale and frothy. Place in the fridge and let chill 30 minutes.

Step 2Add some oil to a skillet and add the mushrooms until golden. Add the garlic and spinach and cook until spinach is welted. Season with salt and pepper.

Step 3Make the crepes buy swirling the batter in a oiled skillet making a very thin crepe. Fill each crepe with the mushroom filling and top with cheese. Fold into a rectangle.
