    smoked garlic sausage, sliced thin
  • 1 lg
    onion, sliced thin
  • 4-5
    potatoes, sliced thin with skins on
  • 1 Tbsp
    garlic powder
  • salt and pepper to taste

How To Make mimi's sausage potatoes and onions

    Lightly brown the sausage pieces to release the oils.

    Saute the onions in with the sausage oils and the sausage browning slightly.

    Layer in the potato slices across the top and sprinkle with the garlic powder and some pepper.

    Cover the skillet with a lid, stirring slightly a couple of times, for about 15 minutes.

    Once the potatoes begin to soften, gently break up the potato pieces and mash a little bit.

    Salt to taste carefully. Most package processed sausages are pretty salty, so careful!
