Ingredients
- 1 package smoked garlic sausage, sliced thin
- 1 large onion, sliced thin
- 4-5 - potatoes, sliced thin with skins on
- 1 tablespoon garlic powder
- salt and pepper to taste
How To Make mimi's sausage potatoes and onions

Step 1Lightly brown the sausage pieces to release the oils.

Step 2Saute the onions in with the sausage oils and the sausage browning slightly.

Step 3Layer in the potato slices across the top and sprinkle with the garlic powder and some pepper.

Step 4Cover the skillet with a lid, stirring slightly a couple of times, for about 15 minutes.

Step 5Once the potatoes begin to soften, gently break up the potato pieces and mash a little bit.

Step 6Salt to taste carefully. Most package processed sausages are pretty salty, so careful!
