Ingredients
- 1 package rice-a-roni spanish rice
- 1 bag (small) corn chips, divided
- 1 package tamaes, (any kind, canned or frozen)
- 1 can chili (with or without beans)
- 1 package shredded sharp cheddar cheese
- - black olives, optional
- - you can add refried beans, jalapeno peppers, and hot sauce.
How To Make mexican casserole

Step 1Cook rice according to package directions: set aside. Coat a 9x11 inch casserole dish with cooking spray. Layer corn chips on the bottom of the dish. Then pour rice over the chips.

Step 2Add a layer of tamales over the rice. Pour the chili over the tamales. Add another layer of corn chips.

Step 3Bake casserole for 20 minutes at 400 degrees. Take casserole out of the oven and sprinkle cheese on tip; the cook for another 5 minutes
