1 pkgrice-a-roni spanish rice
1 bag(s)(small) corn chips, divided
1 pkgtamaes, (any kind, canned or frozen)
1 can(s)chili (with or without beans)
1 pkgshredded sharp cheddar cheese
·black olives, optional
·you can add refried beans, jalapeno peppers, and hot sauce.
How to Make Mexican Casserole
- Cook rice according to package directions: set aside. Coat a 9x11 inch casserole dish with cooking spray. Layer corn chips on the bottom of the dish. Then pour rice over the chips.
- Add a layer of tamales over the rice. Pour the chili over the tamales. Add another layer of corn chips.
- Bake casserole for 20 minutes at 400 degrees. Take casserole out of the oven and sprinkle cheese on tip; the cook for another 5 minutes
